I have been asking (begging) Rinda for her pot roast recipe ever since the Relief Society dinner last month and I was finally smart enough to write it down on the back of an envelope as she told it to me, So, here it is! And, for those who didn't have the pleasure to eat it that night, it is maahvelous!
Rinda's Crockpot Roast
5 lb. roast (Look for the cheapest, usually a chuck roast) Rinda loves Sam's Club's roasts
Olive oil
Red wine vinegar
Place the roast in a large ziploc bag or large bowl and drizzle the olive oil and vinegar over it. Seal it and marinate overnight, turning several times before bed and again in the morning.
Place meat and marinate in a crock pot and add:
chopped garlic
McCormick Pot Roast Mix
Hot water, as directed on the mix package
Cook on high for 4 hours or low for 8 hours.
Add onion, carrots, potatoes and celery as desired.
(Obviously, you will have to experiment with the amounts of ingredients that your family likes. But, this is the basic recipe. It really is wonderful!)
